- 4 eggs
- 2 bananas, mashed
- 1 tsp of shredded coconut
- Vanilla extract
- 1 tsp cinnamon
- ¼ cup coconut or almond flour
- Berries for garnish (optional)
- Mash the bananas in a small bowl
- Mix all ingredients (excepting cinnamon) in a food processor
- Pour the mixture in a skillet pan
- Cook for five minutes on each side
- Top with berries and cinnamon
