Welcome to our recipe for courgette and beef hearty lunch.
We are getting close to the end of our month for Paleo lunch ideas, but I must admit to this being one of my favourites. This is mainly due to how easy this is to make. I was watching a TV show on Sky TV recently where it was showing people adapting to the clean eating way of life and how long it would take them. They all seemed really traumatised by how much of the day was taken up by preparing fresh food and that they would have to get up at 4am in order to make their days meals.
To say I was shell-shocked is an understatement.
We follow Paleo the majority of the time and I have not touched cereal and toast for breakfast in a long, long time. And even though I often don’t have a cooked breakfast it will still be a Paleo one. Then I will have a cooked lunch and dinner. But just because something is cooked doesn’t mean it should take a lifetime to make.
I might have some roasted vegetables for lunch, cauliflower rice, a salad, fritters, omelettes etc and I can say that for me to cook for four of us for lunch it takes the same amount of time as it would in the old days to make sandwiches for us all.
So with the TV show in mind here is a quick yet filling lunch for you to add to your Paleo menu.
- 500g ground beef
- 1 Courgette
- 1 Onion
- 1 Tinned Tomato’s
- 1 Tsp Tomato Puree
- Salt & Pepper
- Olive Oil
- , Add the olive oil to a sauce pan and put it on medium heat. Then add the ground beef with the tomato puree and diced courgette into the pan.
- , Keep stirring until well mixed in. then add the tinned tomatoes and any seasoning you would like to add. We like using some mixed herbs and oregano.
- , Also if the mixture is a bit dry you can add a bit of water to the pan to make sure it does not stick.
- , Bring to the boil and then simmer until the meat is cooked through and the mixture is a nice thick consistency.
- , Serve.
