Welcome to Paleo when you’re allergic to eggs.
I love eggs and openly admit that I just don’t eat them as much as I would like to. I absolutely hate them fried and scrambled but any other way and I am there. They are also a main food on the Paleo diet. If you do Paleo you are likely to have eggs everyday and that is not just for breakfast either!
But just like all the people out there with nut allergies there is also a fair few amount of people with egg allergies too.
My son is allergic to nuts and I always say to him “at least you’re not allergic to eggs”. Just because its so much easier to avoid nuts than it is with eggs. Just think of all those baked goods that contain eggs, they are a natural source of protein, you cover the top of your pastry with egg, your quiche has eggs in and when its your friends birthday you can pretty much guarantee that the cake will be made with eggs too.
Then you go out for dinner to a restaurant and again the eggs are a main factor in most of the dishes on the menu.
But not only have you adapted to the new Paleo life but you need to create a Paleo life without eggs. Again this is a task in itself so how do you do it?
Swap eggs for banana – this is the best bit of advice you will get. When mashed bananas make a brilliant mixing aid in cookery.
Have chicken and avocado – if you want to have a delicious protein/fats balance then it doesn’t get any better than chicken mixed with avocado. Have homemade wraps, burgers, salads and even burrito bowls.
Turkey for breakfast – some lean turkey sausages can make a great breakfast. They are also full of protein and make a great alternative to eggs. Have it with some bacon and avocado and you have a dream breakfast.
Avocado Muffins – because avocados are so thick and delicious they make a great binding agent. Therefore use them in muffins instead of eggs. You’ll also be surprised by how delicious they taste.
These are a few of my favourite ones, but as you experiment you’ll find that there are some great ways to lose the eggs in place of other delicious foods. Of course you can’t have meringues but just think of all those delicious baked goods that you can make instead.
