Welcome to my Paleo one pot butternut squash brunch recipe.
As a mum I often end up going night after night without getting to bed before midnight and then being up before 7am. It goes with the job of being a mum and making sure that everything gets done. But eventually you reach burnout and your man takes pity on you and leaves you to have a lovely sleep in.
Then by the time you have showered and are ready to face some food you realise that it is 10am and you are too late for breakfast but want something to keep you going until lunch time.
This is when a good brunch comes into play. It is that in between meal that fills you up until the evening and makes you so glad that you are on Paleo for all the marvellous brunches you can make yourself.
In this particular brunch we are talking all about a one pot butternut squash dish with some other vegetables and seasoning in it and it is so tasty you will want to go back for seconds.
- 1 butternut squash
- 1 pepper
- 1 onion
- 1 tsp garlic puree
- Olive oil
- Salt and pepper
- Peel and dice the butternut squash and of course throw the seeds out.
- Slice your pepper into chunks and with the onion start to fry them in a frying pan with the olive oil and garlic. Add the butternut squash chunks and cook on a medium heat for 20 minutes or until the butternut squash has softened.
- When all the veg are soft it is ready to serve. Add seasoning to taste.
