Welcome to my Paleo Grilled Prawn Skewers.
You know when you start eating Paleo and changing your diet habits its amazing what foods you are particularly pleased to be eating as part of your daily foodie lifestyle.
I grew up with my mum constantly on a diet. There was Slimming World, Weight Watchers, The Cabbage Soup Diet and even the Atkins Diet to name just a few. She also developed the mentality over the years that everything had to be low fat and that having fat in any shape or form was very bad for us. Then there was always the calorie counting.
It was like life was based around what you were eating and you never really enjoyed your food.
This was the first life difference I noticed when I first went Paleo and discovered how amazing real food can actually be.
But best of all was that all these foods that had been considered super bad for you were allowed and you never felt deprived or on a diet.
I could suddenly eat the turkey skin off my turkey at Christmas, have coconut milk in my cooking without feeling guilty and eat avocado to beat off any Fast Food cravings. Food was enjoyable again and so delicious.
Yes I gave up bread and butter but I got vegetable cakes and coconut oil instead which tastes so much better.
So in honour of this I wanted to share with you my favourite prawns. This is something that is now considered as part of my lifestyle and a great alternative to cheap processed meats that I used to have on a regular basis.
- ¾ pound Peeled Prawns
- 1 lime juiced
- 4 tspns Garlic purree
- 3 tblsp olive oil
- Salt & pepper
- Pre heat the grill pan or oven depending how you want to cook them.
- If the prawns are not peeled peel them and place in a dish and put into the fridge with the squeezed lime juice, olive oil and garlic and salt and pepper for about 5 minutes so that they can become marinated.
- Place your prawns on skewers and then put on a preheated grill (or your frying pan works well too) for 5 minutes and then serve.
