Welcome to my Paleo fruity breakfast pancake.
Unless you are American the chances are you will not experience pancakes very often. It might be something that you have experienced each year on Shrove Tuesday but that might have been it. Or maybe like me, something that you have when you’re on holiday but that is about it.
But I have always associated it with being super unhealthy. This would be something you would have made with traditional plain flour, lots of chocolate sauce and chocolate chips. In fact, in some cases I have even seen it being served with ice cream and this is for breakfast. No wonder I always end up so fat after going on holiday!
But what if we had a healthy version of a breakfast pancake? You could have one that is very healthy, gives you an excellent start to the day, is full of fruit and of course is completely gluten free.
- 190g Banana flour
- 15oz Almond Milk
- 1Tbsp Honey
- 1 egg
- 4 strawberries
- 1 kiwi
- 1 apple
- 1 orange
- 1 can coconut milk
- In a bowl put your flour, milk and egg and mix really well, sometimes the banana flour can make the mixture too thick if this is the case just add some more milk (a tiny bit at a time).
- Heat up a pancake pan or frying pan with a little coconut oil if you need it. Put 1 ladle of the mixture into the centre of the pan and spread around by tilting the around s the mixture moves. You must do this quick as the pancakes do not take long to cook. After 2 minutes flip over and when ready put onto a plate.
- For the fruit chop up the strawberries, Peeled apple, and kiwi fruit and place in the pancake, if you like a bit of zest add the orange as well. Shake the coconut milk, add the honey to the can, mix well and then pour some onto your pancake.
