My favorite paleo breakfast salad contains eggs, avocado, bacon, bell peppers, and herbs. It’s not only tasty and filling, but healthy too. This is also a great snack if you’re getting hungry between meals.
What I love about this salad is its smoky flavor and rich, creamy texture. It’s hard to believe that such a healthy meal tastes so great. On top of that, eggs are rich in protein and B vitamins. - 6 hard boiled-eggs
- 1 avocado, mashed
- 2 bell peppers, diced
- 6 bacon slices
- 2 tbsp minced fresh parsley
- 2 tbsp. fresh chives, chopped
- ½ tbsp mustard
- Sea salt to taste
- Black pepper to taste
- 3-4 baby dill pickles (optional)
- 3-4 tbsp freshly squeezed lemon juice
- Boil, peel, and slice the eggs.
- In a large bowl, mash an avocado
- Add the bacon, vegetables and eggs
- Combine with the mustard, salt, pepper, lemon juice, and herbs
- Mix everything well.
- Serve it right away or leave it in the fridge for later.
