- 1 cup walnuts
- ¾ cup dried cranberries
- 1 cup pumpkin seeds
- ¼ cup coconut, shredded
- 3 tbsp coconut oil
- 3 tbsp cocoa powder
- Honey to taste (optional)
- ½ tsp vanilla extract
- 2 tsp ground cinnamon
- ½ tsp sea salt
- ½ cup raisins (optional)
- Preheat the oven to 300 degrees
- Warm the coconut oil and honey in a small saucepan over low heat
- In a separate bowl, mix the remaining ingredients
- Add the mixture into the saucepan and mix well
- Spread its content onto a large baking sheet
- Bake for 20-25 minutes until the mixture is lightly browned.
- Stir a few times.
- Remove from the oven.
- Press the mixture together to form a flat surface
- Let it cool for 20 minutes
- Break it into chunks and enjoy!
