If you are looking for a healthy (yet easy to make) breakfast for your new Paleo way of life then it doesn’t get any better than having a mixture of avocado, bacon and egg. The egg is perfect for protein and keeping you full for longer, avocado is the best natural good fat that you will ever find and bacon just because as a Paleo follower we love bacon!
There is always a lot of focus on breakfast when you first go on Paleo. I find the biggest drawback is that many people have spent years having toast or cereal and want a quick fix and the thought of them finding a breakfast that has little preparation time and that they can have as quick as a big round of buttery toast can be very difficult.
Well this is when this avocado, bacon and eggs breakfast is perfect. There is very little preparation time and thanks to how healthy it is you get the chance to be healthy for very little cooking time.
Plus I notice there is often emphasis that to be healthy for breakfast you must get up two hours early to prepare it but this is simply not true and this is how it can be done.
So have a read and just think about what you can be having for breakfast tomorrow!
- 1 ripe Avocado
- 4 rashes of bacon
- 2Tbsp coconut oil
- 2 eggs
- Salt and pepper
- Preheat your oven to gas mark 4. Chop your avocado in half and take the stone out.
- Place on a baking tray and put in oven for 20 minutes or until soft.
- Then after 10 minutes grill the bacon and poach or fry the eggs in coconut oil.
- When the avocado is ready place on a plate then lay the bacon across it and add the egg on to the top and season then serve.
