Moist and tasty, apple muffins are the perfect treat for breakfast. Packed with protein and fiber, they propel you forward and boost your energy. This healthy treat is made with paleo flours that add healthy fats to your diet. My favorite recipe also requires walnuts for a crunchy texture. I add cranberries for sweetness, and cinnamon for a spicy flavor.
Paleo apple muffins are easy to prepare and taste amazing. Since you’re using whole ingredients, you’re getting vitamins and antioxidants as well as fiber. Regular muffins contain tons of sugar and extra calories that add inches to your waist. I discovered this recipe out of desperation. When I’ve switched to the paleo diet, I was craving sugar all day long. After trying a couple of recipes, I’ve managed to create a unique dessert that tastes just as good as it looks.
Ready in less than half an hour, these delicious breakfast muffins are a real treat. All you need are some basic ingredients like eggs, walnuts, vanilla, coconut flour, baking soda, cinnamon, and fresh apples. If they aren’t sweet enough for you, add berries or honey.
To save time, bake them in the evening or on a weekend morning. This way, you can enjoy them the next day without spending a minute in the kitchen. Coconut flour can be replaced with almond flour. You can also add flax meal, which is rich in omega-3s and fiber. This paleo apple muffin recipe is gluten and dairy free, making it ideal for those with special dietary needs. Just make sure you cut the apple pieces small enough to cook through. Personally, I use a mini chopper or a grater.
